Our Kick x Vincenzo's Peperoncino is the perfect spicy base for a quick fire spaghetti. Rushed of your feet, in need of something that hits the spot, this is the dish to deliver comforting carbs and spice in one.
Ingredients:
- 4 tablespoons of olive oil (for cooking)
- 2 cloves of finely sliced garlic (yes like in the Goodfellas)
- 1/2 teaspoon of Vincenzo's Pizzaiolo's Peperoncino
- 50-60g of good dried spaghetti (we like La Molisana)
- 200g of classic passata
- 4 tablespons of reserve pasta water
- Parmesan
- Fresh basil
Instructions:
- Bring your water to a boil with a pinch of sea salt
- Add in your spaghetti and cook as normal for 10-11 minutes
- After slicing the garlic cloves, add this in to olive oil in a separate pan on a low heat for 3 mins
- Once the garlic is gently sautéed, spoon in a teaspoon of Peperoncino and stir through with a spatula, on a low heat
- Once the pan is coated in the red garlicky goodness, pour in your passata and leave to heat through gently
- Season with black pepper and salt to your desired taste
- Drizzle in a few glugs of good olive oil and turn off the heat
- Your pasta should be done, strain and reserve a small amount of pasta water
- Toss through your pasta and use a fork to get every spaghetto coated nicely (add in some pasta water a little at a time to loosen if need be)
- Grate in as much parmesan as you please and toss through once more
- Serve in your favourite pasta bowl or go for it straight out of the pan if nobody is home!
- Break off from fresh basil and tear over once ready to serve
