Ingredients:
- 4 slices of bread
- 3 large eggs
- 2 tbsp olive oil
- 1 tsp butter
- ½ tsp chilli powder (optional)
- ¼ tsp turmeric
- 1 tsp cumin powder
- 1 tsp Kick Garam Masala
- 1 tsp Kick Garlic Ginger paste
- 1 green chilli
- ¼ red onion
- Few fresh mint leaves to serve
- Handful of coriander leaves

Preparation:
- Chop the red onion, chilli, and herbs.

Mixing the Ingredients:
- In a bowl, crack the eggs and whisk them.
- Add all the ingredients except the fresh mint leaves and only half of the coriander.

Soaking the Bread:
- Add the slices of bread to the egg mixture.
- Let the bread soak up the egg on both sides.

Cooking:
- Heat the oil and butter in a pan over medium heat.
- Add the eggy bread to the pan.
- Cook on one side for 2 minutes, then flip and cook the other side until golden and cooked through.
- Repeat with the remaining slices of bread until all the egg mixture has been used.

- Serve with more chopped herbs and a healthy dollop of ketchup.
